Happy St. Patrick’s Day everyone! To celebrate we made some rainbow cupcakes that I wanted to share because they’re fun, they have a special surprise in the middle, and they’re kinda healthy.
Even though they’re still full of sugar and butter and more sugar, they were made with a lot of ingredients that weren’t filled with any artificial, well… crap
Here’s a quick overview of how we made them and the ingredients we used:
For the cake, we used Betty Crocker’s Gluten Free yellow cake. We don’t eat gluten-free but our friends do, so we started making this cake for them whenever they came over and we all love it. All you need to add are eggs, water, butter and vanilla. And the metallic gold cupcake holders were perfect for these treats.
To make the cupcakes green, we used this plant-based food coloring from Whole Foods. I’ve always wanted to try these and feel they’re a better option than most food coloring and dyes.
And when I compared the ingredient lists, it was pretty clear.
For the frosting, we used our old favorite – and super easy – recipe. Click here for that recipe. All you’ll need is confectioners’ sugar, butter, evaporated milk and vanilla.
For the toppings, I bought all-natural sprinkles but these cupcakes really needed something else. A few lucky charms did the trick. Along with a rainbow made from Air Herds Extremes. ok, so these may not be all-natural but they are just so cute – I couldn’t resist.
Now for the fun surprise! After we made our green cupcakes, we let them cool, then with a melon baller, we scooped out a piece from the top of each cupcake.
A perfect place for a little treat.
Then we filled the cupcake holes with sprinkles.
We put the scoops back in place and frosted the cupcakes like nothing happened.
When you bite into these yummy little green cakes, you get a little surprise with the sprinkles inside! The cupcakes looked a little like pea-soup but maybe that was because the cake was already pretty yellow. They still tasted delicious!
