Happy Friday everyone! I usually do a little recipe round-up at the end of each month highlighting 4 recipes I tried and loved. But I have a confession… I haven’t been doing too much cooking, or at least not a lot of “new” cooking. It’s been a lot of the same old stuff over here but I’m chalking that up to getting back into the school routine and kids’ activities. Let’s just say we we’re lucky that dinner was made at all.
But this time of year is one of my favorites for all things pumpkin. And I especially love pumpkin-squash soup. I always order it whenever I can find it on a restaurant menu but I never thought it was something I could make. So I decided to give it a try. I combined a few different recipes I found online and created my own version. And I found it is one of the easiest recipes to make and it is so, so yummy. It’s a great option for dinner, lunch, or something you could serve at a football-watching party. I wanted to share it with you in case you’re a little pumpkin-shy too.
